For
vegetarians or us semi-veg, veggie burgers straight out of the freezer
have to be the ultimate veg “fast food”. Grab one out of the freezer,
pop it in the micro for a couple minutes, throw it on a bun or on top of
a salad, and BAM- dinner in no time.
The problem I have with most packaged veggie burgers, aside from the fact that they’re
packaged,
is the ingredient list. You rarely find a “veggie burger” packed with
actual plants! Often they’re mostly made of gross gmo soy-derived TVP or
the like, not something I want to be putting in my bod, vegetarian or
not. This brings up the point that
just because it’s vegetarian, doesn’t mean it’s healthy! Of
course there was a time, when I first started blogging and hadn’t
learned about plant-based nutrition much that I would chow down on
Morningstar Chicken Patties and Boca Burgers a couple times weekly. I
thought, “Well, they must be better than the real stuff…”
sort of.
We live and learn and I have started becoming very excited
when I find veggie burger recipes that are actually vegetable-based!
There are some hidden packaged gems, I really love Sunshine Burgers, but
in an effort to make my own “convenience foods” I started researching
veggie burger recipes, to make and freeze for a quick meal. Nothing is
healthier than a home-cooked meal when YOU pick out the ingredients!
I’m not a stranger to veggie burger recipes. was a hit for sure, I’ve made those a few times. I like the taste of
the brown rice-based burgers from Eat, Drink and Be Vegan, but the
texture is hard to work with I find. The most recent burgers I' Though there is a slight bit of prep work involved (mashing sweet
potatoes, cooking buckwheat, grating/chopping veggies), the end result
is totally worth it. These burgers held together beautifully, had a
fantastic flavor and a nice, soft texture. I’ve made them twice so far
because I intended on freezing half of the first batch and we ended up
eating them all in a matter of days!

No, I have not ventured to make a recipe of my own yet. I’m a bit
nervous to, actually! But maybe I’ll try, just for you, and see what I
